Then stir in 2 tablespoons chopped roasted red peppers until well combined. Serve with pita chips or fresh veggies for dipping!
6. Green Beans with Almonds
These beans are easy to make and so delicious! Steam 4 cups of green beans for about 5 minutes or until tender but still crisp. Toss the beans with 2 tablespoons of olive oil, salt, and pepper to taste, then sprinkle on about 1/4 cup of sliced almonds before serving. You could also add some lemon juice if you’d like—it adds an extra burst of flavor!
7. Baked Potato Wedges
These potatoes are a great way to enjoy potatoes without having them turn into mashed potato soup! Cut 4 large potatoes into wedges (you should have about 8), then coat them with olive oil and sprinkle on some salt and pepper. Bake at 425 degrees F for 40 minutes, then flip the wedges over and bake for another 20 minutes. You may need to turn the potatoes a couple more times during cooking to ensure even browning.
8. Roasted Brussels Sprouts
Boil 200g (7oz) Brussels sprouts in a pan of water for 3 minutes. Drain and cut them in half. Heat 2 tbsp olive oil in a frying pan and fry the sprouts, stirring regularly, until they start to brown. Transfer to a baking tray and bake at 180C/350F/gas mark 4 for 15 minutes, until they are tender and golden brown.
9. Scalloped Potatoes
Peel 1kg (2lb 4oz) potatoes, cut them into chunks, and boil them until soft. Drain them, then mash with 100g (3½oz) butter and a little salt and pepper before spreading them over the bottom of an ovenproof dish about 1cm (1/4in) deep. Cut 100g (3½oz) Gruyère cheese into thin slices and arrange these over the top of the potato mixture, then pour over 300ml (½ pint) milk mixed with 50g (2oz) double cream or crème fraîche and bake at 180C/350F/gas mark 4 for 30 minutes until golden brown on top.

Cut 2 large carrots and 2 parsnips into long, thin strips and either steam or boil them until they are just tender. Meanwhile, cut 1 red onion into six wedges. Heat 2 tbsp olive oil in a large frying pan and fry the onion until it starts to brown, then add the sliced parsnips and carrots and cook together for a further five minutes. Serve your roast chicken with this mixture on the side.
